The masterclass is broken down into 10 lessons

1. Intro to The Art of Vegan Cake Baking

Including good and readily available vegan baking substitutes for staple ingredients (egg and milk), as well fat substitutes and vegan chocolate. Tips for getting a light and fluffy sponge.

2. Mixing the Chocolate Cake Ingredients

A vital step in the baking process that can sometimes be rushed, and when done incorrectly this can really affect the bake. Creating a vegan ‘buttermilk’ to ensure the cake rises well, as well as melting and mixing both wet and dry ingredients.

3. Baking the Chocolate Cake in the Oven

Making sure the cake is baked thoroughly and avoiding common pitfalls at this stage in the process.

4. Mixing the Lemon and Blueberry Cake Ingredients

To get the best consistency for a perfect vegan sponge.

5. Adding the Blueberries and Baking the Cake in the Oven

Ensuring you get an even spread of blueberries throughout the sponge without changing the sponge colour.

6. Making Vegan 'Buttercreams' and Ganache

Making 2 different vegan 'buttercreams' one which can be easily adapted to make other flavours – our vegan coconut 'buttercream' recipe (used in our Chocolate and Coconut cake), and our vegan lemon 'buttercream' (used in our Lemon and Blueberry cake). As well as a delicious vegan chocolate ganache for the outer icing (or filling).

7. Cutting the Cake into Layers

Learning how and why we layer our cakes (using 4 sponge layers), achieving perfectly even and level cake layers to get a professional finish.

8. Filling the Cake

Filling the cake with vegan 'buttercream' to get to evenly filled layers and an uniform professional finish (especially important to achieve the ‘wow’ moment when the cake is cut).

9. Making Crystallised Flowers

How to make crystallised flowers using only vegan ingredients for beautiful, simple and versatile decorations.

10. Crumb-coating and Finishing the Cake

Crumb-coating and icing the vegan Chocolate and Coconut cake with a perfectly iced smooth ganache finish, and decorating with coconut flakes. Icing the vegan Lemon and Blueberry cake with a semi-naked vegan 'buttercream' coating, and finishing with piped 'buttercream' peaks and crystallised flowers .

Plus we're going to guide you through all the methods and techniques, as well as the most readily available substitutes and vegan alternatives, ensuring you avoid the most common pitfalls in vegan baking.

Q: I've never had any luck with vegan baking, will this course fix my problems?

This class will become your essential guide to vegan baking and fantastic resource you can return to again and again to help you through your struggles with vegan baking, or if you're simply looking to perfect and advance your vegan baking skills. We teach you our methods and recipes from scratch so you're equipped with the fundamentals for becoming a confident and consistent vegan baker.

Q: What else do I need to start the class?

We provide a full list of recommended tools and ingredients when you enrol. We recommend having the basic baking equipment, such as mixers, digital scales etc.

Q: Do I have to watch the class at a particular time/date?

No, you can watch the class at any time that suits you. There's no start time, and the class videos and downloadable resources are available from the release date until FOREVER! You have lifetime access and can watch and rewatch as many times as you need, whenever you need.

Q: Do I have to watch the lessons in order?

Each video is a lesson in itself, but we have structured the class in a specific order so we do recommend watching in the order of the class. However if you want to watch a particular class individually they are also suitable as standalone lessons.

Q: How long is the class?

The video duration for the whole class is roughly 1 hour 32 mins plus an intro to what our students can expect from Rosalind Miller Cake School Online. If you're following along as you watch you can take things at your own pace, so the class could take as long as you need!

Q: Will there be ongoing support?

Yes, we're here to support you throughout your whole journey. We've created a Facebook group for our online classes which you will have lifetime access to (you'll receive a link to this once you join the course). The group is for our community of students to support one another, share their questions, results and feedback, and most importantly, be able to ask our team anything cake related. We'll be on hand in the group to answer your questions and keep you informed and motivated.

Q: Is the course certified

Yes, at the end of completing this course you'll receive a Rosalind Miller Cake School Online certificate. We're also working on a digital badge that you'll be able to add to your website and marketing materials very soon.
